Obviously back when they made this movie 30 years ago, there wasn't a deep amount of thought that went into making each sequence 100% logical and realistic, they just wanted to make the scenes in order to progress the story along to eventually have Chuck Norris get some sort of redeeming revenge by killing the enemies in the end.
As far as that big asian guy raping the girl and killing her, they sort of left that up to interpretation of exactly how she was killed, but it was pretty evident he severely battered her up physically and most likely suffocated or strangled her in the process.
