Did Nick become an undead?
Yeah, at least I think that was the case. It's implied but not confirmed.
But did she really? Or, did Nick eat her?
When asked about Susan's whereabouts, Nick says, "She went back about an hour ago. She may have stopped someplace for a bite (to eat)". I take that to mean that she was either eaten by Nick and/or the other zombies... or, possibly, that they turned her into a zombie too and she went into town to get some food (i.e., people) to eat.
why didn't he use the foam that he had with him, to kill the undead with?
Remember, Nick regretted killing the other zombies the night before. At least,
I think he killed them with the foam because by dawn they were just piles of bones. While hanging out with them in the cabin and listening to their stories, he saw that they were just "normal guys" after all. He even smiled while they were telling jokes and talking about women. The morning after, while looking at their skeletons, he said something like "bye, guys". Deep down he really wanted to be one of the undead and later on when they offered him a chance to become immortal we see him
meekly turn down the offer but they said they were going to kill him anyway and I assume they did because he didn't put up any real resistance.
He said he didn't what to live forever and he had tried to kill an undead before with a rifle without any luck. So what the hell was going on!?
See above answer. He really wanted to be one of them. The temptation to become immortal was too great.
