I know there's a few films where an actress is off filming another movie at the same time or they were only contractually obligated for a certain amount of days (Neve Campbell, Scream 3). So why wasn't Jamie Lee Curtis in this film more? Is there any story behind this? She has very little screen time.
I'm not sure but I think it's just the way the script was written. What I do remember about this film was that Jamie Lee Curtis was a bit coaxed into reprising her part as Laurie Strode because she decided to move away from doing horror films. I remember reading that she eventually decided to do it because of her friendship or loyalty to John Carpenter.
Storyline wise, Laurie was pretty beat up. Knife wound to the shoulder, broke a bone in her foot. Hard to do much when you're that banged up. Career wise, she cut her hair, moved on, hence the wig. She had short hair for the Fog. She really didn't want to do it, but felt she owed John and Debra. It wasn't til her 5th horror film that she feared typecasting and went with Trading Places. So it was a mix of both how it was written, how she looked at the time and what her character had already been through.

She did it for the money, also. She didn't get paid much for the original. Looking at the onset pics, it looks like she had a wonderful time filming II.

It was poor writing. Carpenter admitted that he started out trying to create a story where the shape goes through some more victims at a certain location until it's only Laurie that's left. The hospital made most sense but he realised too late that it meant Laurie was immobilised and not pro-active. But he was stuck and had to just plow on.
