Did they?
Stupid history books all say they spoke Latin!!
Stupid overpaid historical accounts of people who were actual Romans, not knowing what language they speak, eh!!

Nothing to do with the languages the target audience speaks and the convenience of being able to understand what characters are saying, eh!!

You should be careful of mocking others and thereby displaying your own ignorance. Ancient Romans spoke Latin, the root of the Romance Languages which include Italian, Spanish and French. The defenders of Masada would most likely have spoken Aramaic but both sides would probably have communicated to each other in Greek - the common language of the Mediterranean world. Is that really the movie you wanted to see? Subtitled with great actors straining to be natural in a variety of dead languages? Rather than a film where the actors speak naturally because most audience members are smart enough to know that we are seeing a TRANSLATION of their characters' life and times?

I think not.
