Do They Really Film One Shot Multi-Tier Action Scenes like that?

I'm asking people who know show biz this question: In the movie where the Stunt Man does practically a 10 minute action scene with a bunch of locations, do they film movies this way? Where are all the cameras? Does one camera just stick on the main stuntman and then they add insert shots (or whatever they're called) later on: Coverage? Just wondering... Might help my upcoming writeup...
