Knife Fight Scene

From the film I got the impression that a one against one fight like that was normally carried out with the two opponents tethered by their teeth? - I can't imagine combat lasting more than seconds with both coming to grief.

One of the high points of the film and one of the best scenes of mortal combat in any film. I love it when they drag the near-dead Injun out of the room and all hell breaks loose again. Party on!

I have come to chew bubblegum and kick asss...and I'm all out of bubblegum.

Realistically you are correct. There are two rules about knife fighting that are indisputable.

In a Knife Fight:
1. Everybody gets cut.
2. The winner is the one who cuts more and gets cut less.

There isn't a lot of dancing around, slashing, and parrying in a knife fight. Some, but not much. If you want to see a realistic knife fight, check out All the Pretty Horses. Trust Me.
