I agree. The prequel fights were alright, and I get what Geo. Lucas' intent was, to show what Jedi at their peak were capable of. But it was too obviously ballet dancing with swords at some points. There is one scene especially, in ROTS, where Obi Wan and Anakin stand within striking distance of each other, and just pointlessly twirl their lightsabers around their own bodies for a couple of seconds. It took me right out of the film and ruined the suspense they were going for.
The Luke/Vader fight from TESB was better, because not only did they not add in all that pointless, showy twirling, and the combatants fight with more realistic economy of motion, but because the fight also helped tell the story. At the opening of the fight, Vader is toying with Luke, and sneakily maneuvering him into position to topple him into the carbonite chamber, which he does. He's trying to capture Luke without injuring him. But when Luke jumps clear in time, Vader has to go to plan B, and becomes more aggressive. Rather than freeze Luke, and take him alive and unwounded to the emperor, now Vader just figures to overwhelm him and beat him down first. If he has to damage Luke a little, then so be it. When Luke manages to land a strike on Vader's shoulder (from which his armor protects him), Vader gets angry and even more aggressive, and he takes off Luke's hand.
It all conveys perfectly what Vader's intent is, and how Luke, at this point, simply isn't powerful enough to go up against Vader.
