Well, in the movie they are called "imperial walkers", so you can pronounce it anyway you like. for the record, at-at is perfectly fine way to say it rather than A.T.A.T. ("all terrain armoured transport" for those who don't know)

Yes, when the movie came out, all the commercial (professional) pronunciations of the acronym AT-AT was "at at", as in the two words.
