Why did they leave the money in the opening seen robbery ? I mean if you're gonna risk prison - I dunno, kinda started the movie off on a sour note for me as it just doesn't make sense, no ??

Because these weren't crooks committing a robbery. They were mercenaries pulling a job for the mob (which Vince had contacted). They had specific instructions and they followed them.
