I mean, Senator Organa (or his wife) was not a king, or?

Because the original script said so. Before George retconned the entire SW universe.

The same reason Darth was a henchman in the original and got promoted to asst. emperor in TESB

According to wookieepedia, her adopted mother was Queen Breha Organa of Alderaan.

Yeah, the canon is that her mother was queen of Alderaan, and her father was its senator and representative with the central galactic government. Her adoptive father has a small role in the prequels, and we get a brief glimpse of baby Leia being presented to her royal adoptive mother at the end of "ROTS".

And the Fanon is that although she became the political leader of the surviving Alderaanians, she never declared herself queen. So in the Disney films, she's still referred to as a princess, even though her parents have been dead fordecades.

Part of the Royal Family of Alderaan, though you do have a point--Bail Organa was never referred to as King Organa in any canon or works, so it has to be all on her mother being Queen.
