This is an old thread, and maybe something went over my head, but it would seem Cookookymon-1's original post was confusing two characters - "...which actor played the very young-looking deputy-like sidekick with the funny, flattened, smokey-the-bear hat and the tall, brown riding boots?").
I think the "deputy" character was probably the character, Noel Nye, played by Michael Parks. Instead of being a deputy, Noel Nye was actually the Pima County Sheriff who apparently replaced Heston's character who was the former Pima County Sheriff. Parks wore a type of brown fedora hat that was commonly used by most working men throughout the first 60 years of the 20th Century. His hat was not a "western" type of hat as we would normally expect to see in 19th Century westerns.
The fellow in the smokey-the-bear hat and the tall, brown riding boots
was Hal Brickman, the apparent gentleman suitor of Heston's daughter, Barbara Hershey, and he was played by Chris Mitchum.
Larry Wilcox of TV's CHiPs series also played one of the escaped convicts.
