Does anyone know why they changed the theme tune after the first series..??

My best guess is that the first one was inappropriate for the show and the second was an improvement to the look and feel.

If you mean the tune written by Geoff Love, as here:

then listen also to the theme to Darling Buds of May - I think they nicked it from George & Mildred, what do you think?

I'm not sure it is a deliberate copy. However it is like the second "George and Mildred" theme, not the first.

Season 3 appeared to have a very slight variation to the theme too, with some additional instrumentation.
