Took me a while to understand what is 'shearing'

I love Australian cinema and that's one of the earlier pearls from Australia. It didn't even bother me that I understood very little during the first 15-20 minutes of the film. It might have been partially due to the aussie accent, but mostly I just had no idea what's this "shearing" or "sheering" or "cheering" they are constantly talking about.
