#1. Why was she called "Princess" instead of a supreme monarch title, like empress or queen?
#2. Why did she have blonde hair?
#3. Does she possess only one hand, as it appears?
Maybe she was trying to downplay her age, wasn't she in the earth's crust for millions of years or something? Princess just sounds younger and cuter. It was a dub too, she might have been "Empress" Elzebub in the original.
The blonde hair is also probably just her trying to look cute. That appearance is fake anyway, since her true form is a dragon monster. The hand I have no clue about, did both hands look alike after her transformation?
Demon Princess Elzebub(her original name) obviously felt she could seduce and subdue the inhabitants of Earth as a beautiful, young, female human. Choosing blonde hair would add to her allure.
After transforming herself back to dragon form, she does have two hands. Maybe she felt her human self would look more powerful with a skull and whip prosthesis attached to her left arm.
