Of course their 'task' is hard labor, i.e. shoveling a bunch of mud out of a swamp.

What did the prisoner want to wipe off, and why wasn't he allowed to?
What was the prisoner rolling, and why wasn't it time yet to do so? (My guess would be a cigarette, but wouldn't he just ask, "Smokin' one, boss?")
I want the doctor to take your picture so I can look at you from inside as well.

So don't know if we'll ever know precisely what some of those specific slang terms mean, but the 'wipin it off, boss?' got me specifically thinking about Cool Hand Luke, where they say some of the same things.
