Looks a lot like the Danish schooner Den Store Bjorn (though the wheelhouse looks a little different): - http://cdn2.shipspotting.com/photos/middle/8/8/5/2172588.jpg

EDIT: - Not the Den Store Bjorn after all - she wasn't converted to a schooner until 1980. At least we now know that the 'Wicker Man' ship is a Scandinavian-style schooner. Back to the drawing board!
