Try Blood In Blood Out & American Me. Both are about Latino gang culture, but pretty brutal prison movies.
Also try Scum from the UK. Young offenders institute, known as the "Borstal" to its residents!!
Oz it great TV prison show too. Loved that! Underrated, but I was gripped for the entire 6 seasons.

Birdman of Alcatraz is a truly great film .. Its Burt Lancaster in his finest role ..

Of the ones you've listed,

Papillon, Shawshank and Cool hand Luke are great .... Escape from Alcatraz is a typical Eastwood movie were he is the flawless hero who escapes, once you've seen one Clint film, you've really seen them all .. Great Escape is feel good, schmaltz, and Green Mile is a sentimental Tom Hanks vehicle, and like Eastwood, once you've seen one Hanks film, you've seen them all ....

I would add "I Am a Fugitive From a Chain Gang", an excellent film from 1932. Wrongly convicted James Allen serves in the intolerable conditions of a southern chain gang, which later comes back to haunt him. The inhuman conditions and the lies which the state of Georgia inflicted upon this guy boggles the mind, and would drive most people insane.

Oh, and a big second nomination for Midnight Express. I watched it again recently and it is excellent.
