e.g. in order to further the point that it was a fetish?

seriously, I always thought ungulates were supposed to be sort of scraggly and big(ger) and dirty (from, you know, rolling around in barnyards and such). This one (until they strapped it into garters, which was still funny, but disturbing) was the cutest critter ever depicted onscreen! It makes a girl want to move to New Zealand and start breeding more of the little buggers! At least if Gene was gonna go bestial, he picked a cutie-pie to make friends with

funny, when I saw all the rabbits during the initial sequence, that's exactly what I thought : "poor rabbits, they must all be dead now" and it really kind of made me sad (only a few seconds though!)

This may only answer part of your question but I saw an interview with Gene Wilder, I think it was on "Inside the Actors Studio" on Bravo, were he was asked a similar question. His reply was that the original sheep was not "attractive" enough for the proper chemistry. (Here's the part that I may have mixed up; memory) Gene said that the first sheep was either a male or a female (I know; not much help!), and was not cute enough for the scene, so they brought in a sheep of the opposite sex; I'm thinking a male, which was what made it an even funnier answer, and that was the sheep they used for "Dolly". So, the answer to your question was, yes they intentionally chose the cutest sheep for the role.
