when Buck meets the Preacher, he is highly suspicious of him, and one of the things the Preacher says as argument against Buck is 'I ain't no eastman' (sp?)...what is the meaning (which I can guess at) and origin of the term?

An 'Eastman' is a man from the east and is considered by Buck to be someone not trustworthy. When the Preacher introduces himself to the wagon train he says he's from 'Sunflower County, Mississippi'. Later on, after they rob the bank and Buck divides the money with the Preacher, he tells Buck he's heading 'back' to Illinois to have 'the biggest revival meeting since King Solomon preached to his concubines.' This is just as Buck had guessed. The setting of the story is Colorado, so Illinois would be 'east' of that.
