What was Evelyn's Occupation?

Dave and Al Monte were DJs.
Tobie was a sculptor/artist.
McCallum was a cop.
Madge was a promoter.
Birdie was a housekeeper.
Murphy was a bartender.
Evelyn .... she had a lot of time on her hands and kept odd hours all while glued to the radio ...

Good answer. Dave should've asked her what she did for a living, like before she asked him if he liked nice girls and such.

Clint's character was a disk jockey with a fancy house on the beach, filled with original art, an expensive sports car, etc. From what I know, DJs don't make that kind of money — it's a movie, check your logic at the front door.

True. She also could have been from a wealthy New York family (the reference to her alleged date back east) and they sent her as far away as they could get her. It's commonplace with mentally ill people who can still function reasonably well to be sent by their families to faraway states and such so the family doesn't have to be involved with them on a regular basis. Evelyn didn't have boundaries, so she would've been demanding her family's time like she ended up demanding Dave's. Still a great movie that's both tragic and funny.

Also, though it was slightly less so in the 1970's, the Monterey Peninsula (where the film's coastal location is situated) is a wealthy area.

It's not uncommon for residents there to be fairly well-to-do.

I think Evelyn could be one of those idle people who spends their life taking interesting university classes...and never gets around to getting a full degree.

I can see her having a job, like Alex in Fatal Attraction

Regional Vice President in Charge of Irrational Behavior.

probably a nurse or schoolteacher where she "helps" peole

My guess is that she was a grifter/opportunist. She was a kleptomaniac who charmed and lured men into her designated spot and then ripped them off.

My dad was a DJ. We had a plain 1200 square foot tract house in the suburbs, and a used Buick. No paintings. But it's a movie, and a damned entertaining one.

Probably a secretary or store clerk.

Not everyone has to have an occupation.

Was thinking she was probably a trust fund kid who got a liberal arts education (hence the poetry) and didn't know what else to do with herself.
