The kidnapping/plane replacement

Why did Sartet and company need to kidnap Evans, Sartet replacing him on the plane? The entire crew gets on later with Sartet already on-board. Am I missing something? Or was it just an effort so they would eventually get caught in NYC (kinda) because Mrs. Evans complains?

When extra security made simple robbery difficult at the gallery in Rome, they decided to kidnap Evans, the insurance man sent to oversee the transfer of the diamonds to New York. Sartet takes his place and joins the other officials accompanying the diamonds on the flight to New York. I guess it was necessary to kidnap him so to learn when and on which flight the diamonds would be transferred. Why other officials didn't know Evans beforehand, it's beyond me.

It was done to avoid scrutiny. Evans was a known entity who had already been cleared; probably before he left the U.S. The police were actively looking for Sartet. They were all over the airport expecting he would try to get out of the country. They knew he would be traveling using an assumed identity and with forged credentials. His picture was prominently displayed at each counter so every counter person could screen each passenger as they bought a ticket, checked in, or even asked a question.

Evans and his 'team', which turned out to be Manalese's people, went through a different check-in and boarding process. Those officials were focused on getting the diamond shipment safely on the plane and out of the country. It was assumed Sartet would not be among Evans' group. As a result, he flew through under the radar. He went completely undetected and would not have been found out if Evans' wife hadn't seen, remembered, and been able to point him out.
