Dave's eating of meat would signify his retreat from an uncaring deceit and show to him an understanding of the 'vegetable elite', forever living a life of death complete.

It's quite possible the Hotel/Zoo scene is taking place inside a computer matrix.
If I remember from the books(been awhile since I read them)
The monolith us essentially downloading Daves consciousness and everything about him in that part. The room was created from memories of a hotel he stayed in before.
I know it's from the novels and not the film, but it can help fill in interpretations.
