When Crabs tried to goad Billy Jack into a fight at the gas station, he indicated that their usual modus operandi for those reluctant to fight was to "put something in their beer." Ignoring the fact that they seem to enjoy beating defenseless people (like the mouthy guy in the VW) or women, does anybody know what the "something" was?

shareActually, they filled his hat with water. They *talk* about regular or ethel, but if you look at the film they use the water hose (gas station type of water hose that used to be free and by the gas, but is now usually pay and off to the side).
Later in that same scene, Billy Jack uses the gas hose to put gasoline on the fellow he just fought. You can see the difference in hoses & nozzles. However, of course it isn't real gasoline since the fellow would be blinded (as anyone can attest who has ever accidentally got gas in their eyes).

Extinguishing your cigarette in someone's beer was the classic method for provoking a fight back in the day. You never see it anymore now that people can't smoke in bars.
