"She's just dead"

Um, now I love a good pun as much as the next guy but aren't the people sitting at that table going to notice that she's dead like rather quickly? Not to mention they got a perfect look at Bond's face and would most likely go running to the authorities.

Yeah. But he's a spy. And he would have gotten away with anything anyway. After all he didn't murder the bint.

Perhaps they were too drunk to care? Or they just didn't give a crap about some hussy? Perhaps they assumed he was joking about the dead thing?

By the time they discover the fact that she had in fact shuffled off this mortal coil, Bond was long gone and out of reach of any authority.

Besides there were larger stakes at hand, such as Largo's plot to blow up Miami. (I think?)

Yeah I get that, but the people at the table WILL realize that Fiona is dead and any logical person would tell the authorities and would be able to give them Bond's description. Yeah Bond could very easily prove his innocence, however if he couldn't I doubt M would go through too much trouble to get Bond out of a Bahamian prison (I mean look at what M did to Bond when he was captured in North Korea), and regardless it would significantly impede his mission to stop Largo

The Bahamas is a British Commonwealth Country, and with a few phone calls from the British government the whole thing would go have gone away very quickly.
