The numbers are the population of the town. The number of people living in Pleasant Valley.

The "2000" is one thing I've never understood, since we never see more than maybe 30 "ghosts" throughout the film; didn't the Union Army wipe out the ENTIRE population originally??? Then there should be 2000 ghosts wildly celebrating the centennial . . .

Yeh, near the start of the film the signpost says "Pleasant Valley, Population 2000". I assume that's why it's 2000 Maniacs

In "2001 Maniacs: Field of Screams" it's hinted that they won't stop until they get 2001 victims to make up for the 2001 that were slaughtered during the Civil War. Perhaps they would do the same thing in this movie.
