I believe the line was spoken sometime after the first gunfight, and after they discovered that Calvera and the other bandits were starving and had no alternative but to return and attack again.
At that point the seven hired guns opted to try to ambush the bandits' camp, kill as many as they could and run off their horses. That was their strategy for lowering the odds. But it failed, because the camp was deserted when they got there.
