Question

What was up with the guy who hopped onto the back of the carriage? The film never explains the significance of this. Perhaps some footage was left on the cutting room floor?

Never mentioned in the movie but for me it was implied that the guy hopping on the back of the carriage was a servant of the Baroness whose job it was to keep an eye out for young girls she could give to her son. He follows her to the inn and pays off the driver so that he'll leave her behind and then heads back to the castle to let the Baroness know about the girl, and shortly after that the Baroness shows up at the inn. He doesn't appear again after that as far as I remember so he winds up being a loose end, but that's what I got from it.

But Greta told Marianne that she was the only servant left at Castle Meinster. I wondered about this and also who was the Baroness' coachman? So I guess it was a minor detail that got overlooked.

I had the exact same question and came to this message board hoping somebody would ask the question on the identity of this mysterious man. He lurks in the woods, jumps onto the carriage, pokes his head in the inn, everybody grows quiet, he leaves and that's it. What?

Who is he? Was he in any of the previous Dracula movie?

I thought first it might be Klove from "Dracula: Prince of Darkness" making an cameo just to peekaboo scare the villagers in the tavern, but this character was named Latour in the castlist, i think he just was spying for the baroness, using the tree trunk trick merely just to see who was in the carriage, if it was an suitful bride for the baroness's son.

The actor who plays Latour is Michael Mulcaster who appeared in at least three other Hammer Films. The jailer in "Curse of Frankenstein" the hospital patient with the tattoo'd arm in "Revenge of Frankenstein" and the convict Seldon in "Hound of the Baskervilles". I believe he lived in Buckinghamshire. He died not long ago. I've seen no discussion on this actor. He was also supposed to be in "Flesh and the Fiends" but I've been unable to see where he appears.
