O.K. what ARE the hazards of hot bread? I need to know and Katie never elaborated on the topic...too busy fishing for a kiss.

As I understand it, steam burns due to unexpectedly extreme heat that's being insulated within the crust(if not allowed to cool first).

It doesn't actually do anything other than let the steam escape which is said to deflate the loaf and in sometimes affect the flavour. To stop her sneaking a bite and therefore ruining the bread as a child Katy would have told an old wives tail about something hazardous that would happen to her. To this day my mother calls Dandelions 'pissy beds' because she was told as a child that if she picked them she'd piss her bed.
