Why did one spit at the log just before the fight at the wedding?

It's the start signal. Once the invitation is made and the other party spits, then both know that the fight has commenced.

The best diplomat I know is a fully charged phaser bank.

For many people, their mouths become dry if they are afraid or anxious. Spitting demonstrates you are not afraid of your opponent nor of the situation.
