They were singing a song in the beginning of the film does anyone know what it's called?

It's called "A-Roving." You can find the lyrics on line (evidently, there are many variations on it).

The movie version, which was arranged by Louis Levy, uses these lyrics:

In Amsterdam, there lived a maid
Mark well what I do say
In Amsterdam, there lived a maid
who was the mistress of her trade
I'll go no more a-roving with you fair maid

I though the late great A L Lloyd arranged most of the sea shanties in Moby Dick

I recently bought the MOBY DICK film score (1998), and the liner notes claim the whaling songs were arranged by Louis Levy.

Do you know the name of the shanty sung by the black sailor during the whale hunt?

Yeah, that's been posted here before. It's called "Hill and Gully Rider." It's also used in instrumental form during the first whaling hunt.
