What was with the sausages?

There's a running gag in this short where the Stooges keep repeating their names and Shemp keeps calling himself various holidays and holds up an appropriate prop such as a shamrock for St. Patrick's Day. At one point, he calls himself "Groundhog's Day" and holds up a package of pork sausages. Does anyone know what the sausages symbolized? Is that supposed to be what happens to the groundhog on Feb. 3?
