What is Ragu of Beef?

shareMy grandmother used to make it. It's just a pot roast (chuck roast) cooked until the meat can be pulled off with a fork.
Then the make a ragu (sauce or gravy) with the meat in it.
We used to take the ragu and ladle it on mashed potatoes or make open face sandwiches.

It's French - the "a" in "ragout" is supposed to have a circumflex over it.

Close. :) The U is supposed to have the circumflex over it to indicate the S is left out from ragouster, as the first E needs the circumflex in fete to indicate the lost S from feste, related to feast which brings us back to dinner. :)

shareYou're confusing ragout with ragu.
Ragu is Italian (in some dialects) for tomato-based pasta sauce. In my dialect, it's called sugu.
Ragout is a French dish, described in another part of this thread. There are no tomatoes in ragout.
BEEF RAGOUT
Ingredients:
3 pounds Beef - chuck, boneless, cut in 1” pieces
1/3 cup Flour, all-purpose
2 teaspoons Salt
1/4 teaspoon Black pepper
8 ounces Sausage
2 cups Leeks - chopped
3 each Celery - stalks, cut up
3 each Potatoes - peeled, cubed
16 ounces Tomatoes - whole canned
1 teaspoon Oregano
2 each Garlic cloves, minced
1/2 cup Vegetable stock (or chicken or beef)
1 teaspoon Flavouring
2 tablespoons flour, all-purpose
3 tablespoons water
Directions:
Combine 1/3 cup flour with salt and pepper. Toss beef cubes with flour mixture to coat thoroughly; place in Crockpot. Add remaining ingredients except 2 tb. flour and the water in order listed; stir well. Cover and cook on Low setting for 7 to 12 hours. One hour before serving, turn to High setting. Make a smooth paste of 2 tb. flour and the water; stir into Crockpot, mixing well. Cover and cook until thickened.

shareIt was not until I saw the movie with CC that I realized it was "Ragout of Beef" rather than Ragoo or Ragu. It sounds like a rich roast/stew, probably with potatoes and carrots and stuff.

Isn't that funny how we all think? I was thinking it was a pot roast served over pasta with a spaghetti sauce over it (ragu)...that recipe posted is great! Thank you for that!

Ragu is a jar of spaghetti sauce. I used ground turkey,to make a pasta meal. delious. try it sometime.
