Sunset Blvd is pretty good too, but that is more about the Film Noir genre with a Hollywood setting.

In a Lonely Place, which also stars Gloria Grahame, is a great movie about just how low screenwriters are treated, and the compromises they have to make for their art. But it's so much more than an anti-Hollywood movie. Just watch it.

Two Weeks in Another Town that was also directed by Minnelli and starred Douglas from '62 was pretty good too.

Obviously not as in depth as this I think Get Shorty shows a pretty good and honest look at the film industry.
shareThe 1989 Christopher Guest movie "The Big Picture" with Keven Bacon was a great satire of the Hollywood scene. Like any good satire, there was a lot of truth in it.
Martin Short is also in it playing a very strange (but possibly typical) agent.
