Why Is Jose's Last Name Irish?

Since they say José is a "South American" "Romeo of the Amazon," why is his last name O'Rourke? Did they think it was better for a white woman to date a Hispanic man who is half white? Did they want to make it more believable that Jack could be mistaken for José? If so, why not just dye Red Skelton's hair black for this movie instead? Also, it's messed up that they had a Hispanic band do a Polynesian dance number. I assume that was to make Hispanics (and Polynesians) look more primal and sensual (fetishization of exotic cultures), which obviously is incredibly distasteful.
