So why did AK not believe the Count was coming back to her when he had to go away on a trip. She started wandering around babbling. Why???? She seemed ok all along and then she suddenly becomes sorta crazy?

Don't worry about missing something profound. Anna was simply an ignorant, batty wench with the emotional maturity of a 13 year old until growing up in the last five minutes of the film.
