What is the name of the waltz that is playing in the background at about the 20 minute mark, when the party guests are going down for some supper? It is quite familiar.

The waltz you refer to is from Johann Strauss' opera, Die Fledermaus, from the finale of Act 1. Commonly known, simply, as "Waltz from Die Fledermaus." Hope that helps (hope you see this).

It is also know as "The Voices of Spring"
