I didn't think they'd burn it down on purpose but I thought, with all those candles and people running around, it might happen accidentally. In 'real' life I'm sure they would have burned the place down; especially once they realized she was on Charles' side and helping him.
Even with the inn gone, there was more there, like the farm, to keep her tied to her homeland. Instead of going with him, he would have given her funds to rebuild. Had there been a fire, it would have, after all, been due to his presence there.
