Was the very tall black man (looked blind) a zombie himself? I thought so!

Did the mother-in-law actually kill the blonde, and then she came back as a zombie?

And if she was already a zombie, what was the point of Wesley stabbing her?

Carrefour and Jessica are both zombies. Wesley stabs Jessica during a crucial moment in the voodoo ceremony - he and Jessica are acting under supernatural compulsion, not of free will. The voodoo man stabs her effigy at the moment Wesley stabs her body, thus giving the undead woman a natural death.

After this, more voodoo causes Wesley to carry her to the sea, with far-reaching results.

Exactly. Wesley and Jessica act due to supernatural forces.
I understood that the voodoo ritual was in order to set Jessica free from the pain of never ending suffering caused by death (something like that). And because she was not a good woman when she tried to escape with Wesley.

Now, after Jessica's death, "happiness" can happen for those who deserve it. Referring to Betsy and Paul. I can't remember the exact words but that's what I understood.

Wonderful movie, wonderful message.
