Why did the hunters choose winter to hunt for animals?

Most animals hybernate in the winter, so why would they try to hunt them down in the winter? Especially when it's snowing?

You'd think they'd wait until spring when there easier to spot. Then again I know nothing about animal hunting lol.

Bears hibernate. A few other do as well. Most do not. Deer definitely do not. Most deer hunting seasons are in the fall to winter. It is usually illegal to hunt in the spring.
