What was up with the horse ?
Does anyone know ? I was laughing but I could not tell if that was intentional to show the silliness of him going through the same conversation a 2nd time, or if it was completely unintended and just happened ?

I have no idea but I wondered the same thing. That horse was stealing the scene. I don't see any reason why it was deliberate, nor do I see any reason why they couldn't just have done another take if they didn't want the horse so involved. That horse -- probably just another bit player trying to expand his role and make a name for himself.

shareI think the only way they could have made the horse do that would be to put some sort of scent on Henry Fonda's head or hair. A scent that is attractive to horses.

shareI reckon sugar water would be a possibility. Horses seem to know when a person has a sugar lump in their hand. Hay and oats might be difficult to concoct in a perfume. I think horses also like the smell of apple and peppermint which would be easier products from which to produce a scent.
