What was the Baker's name ? Real name or role name.

Vogel played by Niall MacGinnis.

No....The Hutterite baker Vogel was teaching.

Do you mean the one sitting next to Vogel at dinner or the one in the bakery?
In either case, he's unnamed and uncredited

They are both the same.....he apologises for the poor bread.

There's another trainee baker in the bakery. I don't know the actors who played either of them and they're all uncredited

I think his name in the movie was David. Possibly Frederick Piper.

Don't know his name, but I know the next baker will be very careful how he makes the bread when he hears what happened to the last baker.
