'Mason-Dixon Line' Number

The opening number doesn't make any sense. Joe and Kitty are seen singing a minstrel number, without any facial embellishments. Then backstage, among the troupers is a Minstrel Man! What I want to know is why couldn't that man (played by Al Herman) sing that minstrel number?
