Last two minutes made no sense

So, up until that moment he was afraid of her, tired of her and annoyed by her. He even ran up the scaffold in the museum to avoid her, and then all of a sudden and with no progression whatsoever, he says he loves her. I think the movie would have been so much better with a 15 min more thought out ending. Same happened with The Philadelphia Story.

Nope. For one thing, this is a comedy and that is a great ending for a comedy. Why should the ending make any more sense than the rest of the film?David has suddenly come to recognize consciously what he has been fighting for a long time. Namely that Susan is a lot of fun, and he wants her and not Miss Swallow (who won't).It also comes up in real life, although the circumstances are exaggerated here, that suddenly someone realizes something has been percolating through their mind for quite a while.

You have to keep in mind that the movie is an extended somewhat dirty joke about finding a lost Bone. Susan brings it to him, With his Bone restored, how can he resist?

Yep. The movie starts with David finding the lost bone, and it becomes clear that David is in serious danger of losing the primary function of his own "bone" if he marries Miss Swallow — who surely won't. But Susan will — without a struggle.

Actually, no.

There IS a progression; it's a simplistic one, but a progression nonetheless. After David runs up the ladder, Susan follows him and (finally) provides him with an explanation for her outlandish behavior.

SUSAN: All that happened, happened because I was trying to keep you near me. I just did anything that came into my head. I'm so sorry.

After hearing that, David sees Susan in a different light and realizes he was lucky to have met her when he did.

So while a progression like that would be too facile for a Eugene O'Neill play, it works just fine for a screwball comedy like "Bringing Up Baby."

David has an erection. Susan gets on that erection and causes it to collapse, i.e. he loses his erection. She is returning his missing bone to him.She also says that she will have oral sex with him. How can he resist her any longer? It is really very simple.
