Stella Preparing Potatoes


I've always wondered what Stella was making when she cut the potatoes up in the kitchen; they looked uncooked.

Do we think she was making scalloped potatoes?

I've always quartered my potatoes before boiling them and, come to think about it, every person I know does same.Does this address and answer your question ?
As you don't say exactly why this confuses you, I'm taking a guess at your meaning.

Yes, I, too, quarter my potatoes prior to cooking but Stella seems to be slicing them thinly - Thus I thought she might have been making scalloped potatoes as the slices are so thin.

FYI, I have a recipe for a creamy potato and celery root bake. I slice the potatoes and celery root in 1/4 in disks and boil for five minutes (with salt and pepper in the water). This is to soften the potatoes prior to putting the casserole together so that you don't have to bake it so long. So, in fact, she may have been making scalloped potatoes.

They could be for fried potatoes. You cut the potato in slices then fry it. She might be fixing them in some other way, but fried would be very common at that time and among poorer people.

They used to be a favorite in our family. People vary at eating them plain, with ketchup or even with mustard. When there were leftovers, they would sramble an egg in with the pieces of potato and call it "scrapple"; if it was available, chopped-up onion was added. For some reason, most people liked mustard on scrapple.

EDIT: I just watched the scene. The potatoes are peeled and have been soaking, likely in salt water. She might be getting ready to make potato soup or potato salad. Generally, people leave on the skin for fried potatoes. So, this might be for another dish.

How odd that I've watched the film so many times throughout the years and never bothered to think about what she might be cooking. Only on IMDb forums do these things come up. *giggle*

My husband panfries thinly-sliced potatoes with onion and rosemary. Delish!

My mother panfries them with chopped onion, too! I doubt that we ever had rosemary though. I don't recall her using anything besides salt, pepper and paprika. They call them homefries around here; perhaps other places do. One restaurant where I worked had them on the menu as cottage fries.

The funny thing is, didn't they JUST get home from the train station, after Stella had picked up Laurel from visiting her father?? How did those peeled potatoes manage to appear in the sink? LOL!

She put them to soak before she picked up Laurel. Then she was quartering them.

They were already peeled and soaking in water to stop the oxidation(turning brown)
I'd say she was boiling them to make mash potato.

My family always peeled them for fried, unless we are using red potatoes.
