There's no big mystery or hidden meaning. You just must have missed the earlier reference within the same scene. When Fred is presenting to Honey Hale his hodgepodge of dancers, he says the first three girls are the McCarthy sisters; a bicycle act from Brooklyn.

Honey, Ginger's character, is just repeating it when she says, 'if you need me send one of the McCarthy's over on her bicycle.' She could have easily said any of the but the McCarthy's were the only ones of the group with names.
