I am watching the film right now and in the introduction by the lead actress, she says he didn't and there was a translator on set. She also said that the cast loved him and called him "Uncle George".

For what it's worth, it's mentioned in the TCM intro that's playing in the theaters lately that Melford didn't speak Spanish. Can't remember the name of the gent whom they indicated was by his side, speaking with the actors when necessary.

He didn't but according to Lupita's introduction they had a translator and he was able to understand them
