Was it really Chinese he was speaking? I'm aware that Chinese comes in a gazillion of dialects, but that somehow didn't sound like Chinese anyway...

No...it's typical of white Hollywood back then who wanted to portray Asian people as illiterate who couldn't speak English properly..typical white racist stereotype!
