It's possible (very possible) that she didn't agree to the hundred page long contract they put in front of her. It's not like signing on to do a film. It's committing to a decade long franchise which includes obligatory, mandatory, re-shoots on an unpredictable schedule (on top of endless hours of ADR sessions). MCU actors are also obligated to do all press promotions, convention appearances, junkets, etc. In most cases, they are under obligation to stay thin (or stay muscular) at all times until the contract ends. Marvel Studios is owned by Disney now, so they have limitless legal and monetary power over the talent's career. Any talent offered a position under Disney/Marvel should think long and hard before signing her soul away.
