Sometimes they look to be deep blue, other times green, sometimes hazel.

Oh, and I'd say they're blue. It's possible that he might be wearing contact lenses for some roles that require a different eye colour, or perhaps certain lighting brings out different nuances, but in photos they appear to be a rather nice shade of blue.
