For me it's his cameo in Spider-Man PS4 as well as his cameo in Spider-Man Into the Spider-Verse

It's hard to choose. Even though I don't like the movie that much, I like his cameo in Spider-Man 3 where he tells Peter, "I think one person can make all the difference." Probably the funniest one in another movie I didn't like was in Fantastic Four Rise of the Silver Surfer where he isn't allowed to go into Sue's and Reed's wedding and says, "But I'm Stan Lee." Which by the way was straight out of the original Fantastic Four comic where they got married. I admit I do like a lot of his others. Like the one in Captain America the Winter Soldier where he's a security guard in a museum, sees that Captain America's costume is gone, and says, "I am so fired!" Or the one in Guardians 2. It's funny though, way back when X-Men 1 and Spider-Man 1 came out, I didn't really know who he was. I also didn't even notice him in X-Men 1 for many years. Come to think of it, I don't even remember him appearing in X2 either.

Fun fact: The only movie were his cameo is a part of the plot is in Norton Hulk where he is the one who obtains the bottle containing Hulk's blood.

He didn't appear in the X films because he wasn't involved in their creation.

Actually, he did have a cameo in both X-Men 1 and X-Men The Last Stand. Also he did create the X-Men. Just not the most popular characters like Wolverine, Storm, Nightcrawler, Colossus, Bishop, Cable, Gambit, or Rogue.
